So the best way to make xcritical is to make a simple syrup first, by heating water and sugar together until the sugar is completely dissolved, and then mix that with the lemon juice. The rule of thumb when making simple syrup is to use equal parts sugar and water. Combine in a medium pot and bring to a boil over medium-high heat, stirring until the sugar has completely dissolved. Transfer to a measuring cup to cool while you juice your lemons.
